I’m always looking for quick and easy dinner ideas for the family, especially now that I’m just weeks away from having baby #3! One of my biggest cravings this pregnancy has been fresh fruit and light meals, which means these Easy Pulled Pork Tacos with Homemade Pineapple Mango Salsa are hitting the spot!
Pulled Pork Tacos with Pineapple Mango Salsa
These tropical tacos are extremely easy to make. I used the Farm Rich Smokehouse BBQ Sweet and Spicy Pulled Pork, all I had to do was pop it into the oven for 35 minutes and you can prep the salsa ahead of time. So when you have guests over you can spend time socializing instead of making food! The sweet and spicy pork paired with a really sweet pineapple mango salsa make the perfect combination.
The homemade salsa is really easy to make, it includes honey and cinnamon to add a little extra flavor and it’s delicious! Here is my recipe for my homemade pineapple mango salsa! It would work great on tacos, rice, or just used as a dip! *This recipe does make a full bowl, so if you are just making it for a small dinner I suggest cutting it in half.
Pulled Pork Tacos withMango Salsa
- 1 full pineapple
- 1 mango
- 1/2 red onion
- 1/4 cup honey
- 1/2 chopped cilantro
- 2 tsp. cinnamon
- 1/2 lime squeezed
- Chop all ingredients.
- Place in a food processor and gently pulse.
- Pulse a few times than use a spatula to mix it up. Pulse a few times more.
- Be careful not over blend or it will become really soupy.
- Serve with cilantro and lime.
We made our tacos with the Farm Rich Sweet and Spicy BBQ Pulled Pork, Rice and Homemade Pineapple Mango Salsa and they were delicious!
