While baking from scratch is always a treat, sometimes you just need something quick and easy. One of my favorite things is to ‘dress up’ boxed cake mix. We almost always have boxed mixes on hand, especially some of my favorite gluten-free ones, and to keep things interesting we like to add new treats to the mixes like fresh fruit, homemade frostings and new toppings. SO here is our fun and Easy Gluten Free Chocolate Peanut Butter Filled Cupcakes!
Today, I’m going to show you an easy trick for making boxed cupcakes look like gourmet treats.
I am allergic to eggs, wheat and soy, so I thought I’d share some of my go-to baking products with you. These Enjoy Life chocolate chips and Betty Crocker Gluten-Free Chocolate Cake Mix are staple items around here.
To start, make the cake mix according to package and then add a bag of chocolate chips to the batter.
Fill the cupcake liners about 1/4 full and then add a nice big glob of peanut butter in the middle.
Then, fill the remaining cupcake liners will additional batter.
Place in the oven for about 18-20 minutes.
Once the cupcakes have cooled, it’s time to frost! For these special treats, I whipped up a delicious Peanut Butter Cream Cheese Frosting.
Frosting Recipe:
4 oz. regular cream cheese
1 cup powdered sugar
1/2 cup peanut butter
1 Tbsp. milk
Cream together and then swirl onto the cupcakes. For extra garnish add a few chopped nuts!
