This is the time of year when everyone is trying to eat healthy and fill their diets with lots of greens and clean eating! I’ll admit, it’s reallllly hard for me. I have such a sweet tooth and being a stay-at-home mom and a working mom, the second nap time hits I jump into work and often don’t take the time to make something healthy for myself for lunch. So I’m trying something new.
My new thing is to make one big salad filled with fresh greens, protein and lots of goodies and keep it in the fridge all week. That way all I have to do is dish some up, pour my dressing on and I can eat while I work. We’ll see how this goes!
This week I made this delicious Pistachio Chicken Spinach Salad with a homemade Honey Balsamic Dressing.
The flavors work really well together. I love the sweetness of the fresh fruit paired with the salty pistachios is a great combo.
It’s so easy to just grab a handful after my lunch and get working around the house!
The dressing is a real complement to the citrus flavors in the salad.
SALAD RECIPE:
- Spinach Salad Mix
- Grilled Chicken Sliced
- Blueberries
- Cut Strawberries
- Crush Pistachios
DRESSING RECIPE:
- 2 Tablespoons of Olive Oil
- 1 Tablespoon of Balsamic Vinegar
- 1 Tablespoon of Honey
This dressing works on so many salad recipes!

This looks delicious!! For the dressing though, is balsamic oil the same as balsamic vinegar?
