We only have a few weeks left of summer around here and I know many of you have already gone back to school, eek! I may or may not have bought a ton of fall decor today, but we are still hanging onto the warm nights and getting together with friends and family. Which means I’m still brining out the summer dishes!
Pasta salad is a summer classic. There are so many different takes on it and today I’m sharing Pesto Pasta Salad along with a fun way to serve it. It’s full of flavor and you can dress it up or down.
I always find pasta salad to be rather difficult to eat on a paper plate with a plastic fork. So why not make it easy for your guests and serve it in a cute mason jar with a personalized label?
So let’s talk details. Fresh ingredients always bring out the flavors in the salad. We have a fresh produce stand across the street from us and I don’t take it for granted. Such a little treasure.
Ingredients:
- Box of spiral pasta
- 1 Cup of Pesto Sauce
- 2 Garlic Cloves
- 1 Red Onion
- 1/2 Cup Pine Nuts
- Fresh Basil
*If you want to make it more more a meal, try adding grilled chicken and even some cherry tomatoes.
Boil your pasta according to the package. Meanwhile, chop your garlic and onion.
Combine pasta, pesto, pine nuts, garlic and onion. I make this with gluten free pasta too!
Toss together and place in fridge to cool.
Garnish with a little parmesan cheese and basil and serve!
