Gluten Free Pasta Dish Recipe

I haven’t posted a gluten-free recipe on the blog in a while so I thought I’d jump in and share one of my favorite dishes as of late. During my entire pregnancy with Little Man, I craved pesto. Lots of it. On Everything. And since pesto goes so well with pasta, and I’m allergic to eggs, wheat and soy, I came up with a delicious Gluten Free Pasta Dish Recipe that incorporates pesto, sun-dried tomatoes, parmesan cheese and meat! And today I’m using Hillshire Farm’s Gourmet Creations Basil Pesto Chicken Sausage. And yes, it definitely satisfied my craving :)

This would make a great family style dish or if you are like me, make one batch and eat it for lunch for three days!

Here is the full ingredients list:

– 2 Basil Pesto Chicken Sausages

– 1 Box of Gluten-Free Penne Pasta ( I used Barilla for the first time and LOVED it! It’s my new favorite)

– 1/4 Cup Pesto Sauce

– 1/2 Cup Sun-Dried Tomatoes (and some of the oil)

– 1/4 Cup Pine Nuts

– 1/4 Cup Parmesan Cheese

– 2 Tbsp. Olive Oil

Prepare the This Hillshire Farm’s Gourmet Creations Basil Pesto Chicken Sausage  by slicing it into 1/4″ slices. I love the flavor this sausage brought to the dish!

Heat 2 Tbsp. of Olive Oil on med-high heat and then add in the sliced sausage. Saute until lightly browned. Place the burner on low and add in the pesto and sun-dried tomatoes to warm.

While the sausage is cooking, cook the pasta according to the box. Drain.

Mix the sausage and sauce mixture with the pasta and sprinkle with pine nuts and parmesan cheese.

    Are you sure it is 14 cup pine nuts? It looks delicious. 1/4 cup sounds about right.

    Looks yummy. Always best to moderate this kind of dish though as the gluten-free alternatives can raise blood sugar even more than wheat.
