Chicken Poppy Seed Salad

The sun is shining, there is a nice breeze, smell of BBQ in the air and a stress-free vibe all through the house. There is nothing better than summer time. In the Pacific Northwest, we haven’t had a lot of warm weather this year so we take full advantage of each day that actually feels like summer.

One of my favorite summer time meals is this fresh chicken poppy seed salad. After a long day in the sun there is nothing like a savory light meal that just hits the spot.

Ingredients:

– 2 8 oz pieces of boneless skinless chicken breasts

– Mandarin oranges

-Cherry tomatoes sliced in half

-3 celery stalks chopped

-Sliced almonds

-Lettuce

–Brianna’s Poppy Seed Dressing

Don’t those ingredients just look yummy?!

If you haven’t discovered Brianna’s salad dressings you are seriously missing out. They are amazing and VERY friendly to those with food allergies. I have a hard time finding dressings that are gluten-free, soy-free and egg-free and Brianna’s has a whole lot of ’em that are simply delicious.

After you rinse the lettuce and put it on a large salad bowl, mix all of the ingredients together until the dressing is spread evenly.

Meanwhile, season those chicken breasts with some salt and pepper and place them on the BBQ until cooked thoroughly.

Let the chicken cool for a few minutes, slice and voila!

Ok, so I’m not the best food photographer but don’t let my pictures deter you away from trying this salad. It’s so simple, yet so good!
