Hamburger Cupcakes

Happy 4th of July!

You may ask why I am sitting at a computer on one of the greatest holidays, but I swear have a good reason. At this moment my 3 month old is sound asleep in the nursery across the hall (I don’t know how she is sleeping through this noise!) and I happen to have a great view of the neighborhood show from the den. Best of both worlds if you ask me :)

Earlier today we went to a BBQ and I brought along these fun treats. You may be thinking, ‘So what? They are just little sliders,’ but look a little closer…. they are actually a delicious dessert! Here are some fun Hamburger Cupcakes for you to bring to your next outing :)

I wish I could take credit for the genius idea, but I can’t. I actually saw these at a bake sale awhile back and thought they were the cutest thing and couldn’t wait to try them out. Not only are they delicious, they are SO easy to make!

Because I was bringing these to a large gathering I decided against making them gluten-free. Although, I am now wishing I had because it was EXTREMELY difficult to not lick the bowl! If you wanted to make them gluten-free I’ve included some tips below.

Here is a quick rundown on how I put them together…

What you need:

-Yellow cake mix (for gluten-free I suggest Pamela’s Classic Yellow Mix)

-Brownie Mix (for gluten-free I suggest Bob’s Red Mill Brownie Mix)

-Green and Red cake icing

-White Sprinkles

How to assemble to cupcakes:

-Make a batch of yellow cupcakes. NOTE: I only filled the cups about 1/2 way so they were a little smaller than normal cupcakes. Once they cool, cut them in half and set aside.

-Make a batch of brownies. NOTE: I used a 9 X 13 pan so they were not as thick. Let them cool and then cut them into 1.5-2″ circles. You could use a cookie cutter or a kitchen object to make the circles. I ended up using the lid off of a cooking spray because it was the perfect size :)

-Place a brownie in the middle of the cupcake.

-Decorate the top of the brownie with colored frosting, red for ketchup, yellow for mustard and green for lettuce. NOTE: I used store bought frosting that included decorating tips.

-Place the other end of the cupcake back on top the brownie to complete the hamburger.

-To top it off place white sprinkles on top to look like sesame seeds.
